Same here WJ, ohhh....I miss my caramel treats at night. That little bit of sea salt on the top really added to it too.
I slept soooo well. :)

I want to attempt hard candies, anyone have advice?

Cook your caramel mix longer and it will be like hard candy. Cook it to the hardball stage, then spread it very quickly into a thin layer. Top it with nuts or whatever before it completely cools. ;-) Like DrZiggy's currant clusters, which would be a nice lolli-pop if you pour small amounts onto the lolli-pop sticks and then let them cool.


Any candy recipe that uses butter can be adapted I would think.
Canna Lolli-pops....YUM! (don't know if those use butter, but they sound good. LOL)

could you not make caramels with a sugar substitute?

Well, I absolutely hate the taste of the "fake sugar" stuff. The after taste of it stays with me for hours.
Maybe Honey will work, hadn't really given it much thought. I'm going to look into that and see if there is an alternate that will work the same in the cooking process and not have the dangers that sugar has.

A quick look on Honey tells me that it's not really good for people who can't have sugar either. Shame, cuz it will caramelize much like sugar.
Agave might work, I've never tasted it. It comes from cactus plants. Hmmm.....

I am having some troubles lately. Doctors having trouble agreeing, don't you hate that? When everything calms down, I think I might try some Stevia caramels. Can't spend much time upright now. But I will be sure to relate the Stevia. Like you, I can't stand the after taste of fake sugars. I'd rather give myself a shot and then eat a little sugar. I am getting a better blood sugar tester tomorrow and I am hoping that one that can give me better suggestions of insulin dose with it's on-board carbs calculations.

Hey WJ, when you are up and running (well, don't run...just get around decently) I would love to see and read your thoughts on the stevia! I want to make caramels soooooo bad, but I just can't do that sugar right now. Damn!

On another note for the thread, just in time for Holidays...check out this site for recipes. They have cannabis pumpkin pie, cannabis cranberry sauce, hot canna apple cider....all kinds of goodies. Thought you might get some ideas and make some goodies to show us.

Because Milk is such an essential part of baking and other cooking, I'm going to post a recipe from the site I just posted for CannaMilk:

There are a variety of CannaMilk recipes that call for anywhere from ½ ounce to 3 ounces of cannabis per 1 gallon of whole milk. The potency of the recipes on this site depends on the concentration of cannabis in your essential ingredient. The amount of cannabis in the recipe below is just a suggestion and can be modified according to your personal dosage.

Time Required: 1 hour

What You Need:

large saucepan
1 gallon whole milk
1 ounce cannabis (finely ground)
cheesecloth
spoon
Tupperware container with lid
rubber band (one that will stretch around the rim of your Tupperware.)
Steps:

Heat the milk in the sauce pan on a medium setting. Do not let the milk boil.
Add your cannabis to the hot milk and stir gently.
Simmer the mixture for at least one hour. Stir occasionally.
Prepare your Tupperware container by taking 2 sheets of the cheese cloth and securing it over the lid of the bowl using the rubber band.
Pour the Cannamilk mix slowly over the top of the cheesecloth and into the container. Repeat this step as necessary to strain all of the milk from the plant.
Cover the container with a lid and place in the refrigerator.

The Almond Milk recipe sounds delicious as well!

Quite different, here's the recipe:

Cannabis Almond Milk
This recipe works best when the almonds you are using have been soaked in water for 8 hours (overnight is OK). Drain the water and rinse almonds before using in the recipe below.

Time Required: 2 hours

What You Need:

food processor
½ cup raw almonds
3 cups water, distilled
cannabis, coarsely ground (recommended 1-4 grams)
cheesecloth or tight strainer
Steps:

Blend the almonds and water in a food processor until it resembles milk.
Strain the almond milk through a cheesecloth or strainer.
Add the strained milk to a saucepan and bring to a light boil.
Add the ground cannabis and reduce heat. Simmer for 2 hours, stirring frequently.
Remove from heat. Chill and serve, or use as a replacement for milk in any recipe.
 
I just made my first batch of CannaButter so now I can play this game. Brownies were first on the menu followed by Ginger Cookies.

i made these for a friend who does not smoke as an alternative to all the pain relief drugs that the doctor prescribed them as they no longer have the desired effect.

my friend said after taking half a cake before going to bed it was the best restful nights sleep that they have had for a long time and did not awaken once during the night hey presto!

i make them about every ten days or so now lol.

cannabutter - made with Night Queen 5g bud 5g trimmings 125g unsalted butter.

cake mix - shop bought 12 cup cake pack just add 1 egg 3-4 dessert spoons of melted cannabutter 3-4 teaspoons of water.
