During the time when it is not vacuum-sealed in a bag? Or do you mean while sealed up? If the latter, surface area wouldn't really be a factor (it won't dry any faster, and it won't have any additional contact with the atmosphere from a larger surface area). As with most of my posts, you can infer an "IMHO" here, lol - but science supports the opinion, since the bag material is not porous.
I’m thinking it helps in the drying between sealed stages as well as create more reactive surface for whatever alchemy is at work. We don’t yet understand the science behind what’s going on here. It occurs to me that the intense biological molecular composition of cannabis is creating something unique. If that’s so, increased surface area feels like a good thing.
