What do you think would be the best acid to infuse?
I'm thinking it wouldn't be too hard to infuse sake and most other grain alcohols and cook with those. But they don't always have the right flavor profile. Can you infuse wine? I would think that heat would ruin most wines?

Heat it's just a way to speed up the process of infusion.
Wine would not like the heat, sunlight, or air but one can drop buds in wine, reseal and wait 4-6 months. An alcohol that is stable at room temperature, such as rum will not spoil in those 4-6 months. But you could also heat and reduce a hard liquor like rum or vodka.
If I were adding cannabis to wine, I would soak decarboxylated marijuana in Brandy for a couple of days, reduce the brandy slowly under a low heat, then mix with a full bodied red wine like a malbec or a merlot. This would be a double fortified wine (cannabis and brandy.)
I don't mix white wine with anything, but I suppose one could make a decarboxylated marijuana tincture with a cherry liqueur, midori, hypnotic, black currant liqueur or similar mixer
