The plant wants to grow straight up. So the main stem will grow fastest upward if left alone. If you tie it over and make parallel to the ground you are forcing growth auxins to the next nearest vertical shoots. By manipulating where the auxins go you can force you plant to be bushier with a more even canopy which is useful indoors as the light stays close to the majority of the buds.
