Homemade Ice Cream & Infused Dark Cherry Sauce
I got my homemade ice cream done and made a sweet dark cherry sauce infused with THC powder. I'm figuring about two teaspoons of infusion for each huge parfait. I love those frosted parfait glasses.

 
I've got Chocolate Rice Pudding almost done for dessert tonight. I will add some THC powder to it as soon as it cools a bit.

THC Infused Creamed Chipped Beef

Commonly known as "Sh*t On A Shingle"




Being from a poor family when I was a child, we had to stretch ingredients to make the most out of everything available to us to provide food on the table. We spent summers working in the fields for blueberries, in the trees for apples, cherries, and other fruits, and there was lots of bartering between my folks and farmers to supply us.

One of those barters was to a Dairy Farm not far from our home. In exchange for fresh milk from their cows, myself and my two siblings were assigned to clean the cattle barns twice per week. It was an all day job, and slinging pitch forks full of smelly "stuff" haunted our dreams at night. Not to mention a few kicks in the head when getting too close to the feet of the cows while cleaning. LOL
The reward was a supply of milk and cream throughout the week. Mom did her best with the supply and often made this treat for us, usually served over toast for breakfast. She used the sauce for dinner sometimes adding cooked ground beef served over potatoes or pasta, and sometimes rice.

This is a basic white sauce from the back of an old Betty Crocker cookbook that can be made thin, medium or thick. I always choose the medium thickness sauce and add the chipped beef once the sauce is thickened enough. You can use thin sliced ham in this too, but be careful with the saltiness of store bought ham and beef slices. Adjust how much salt you add or don't add to the sauce after the ham or beef is mixed in and taste tested.


Ingredients:
For a medium thickness white sauce that makes 1 Cup
2 Tablespoons butter
2 Tablespoons all purpose flour
1/4 teaspoon salt
1 Cup Milk
Dash of white pepper
Infusion of your choice. I doubled my recipe and used 2 tablespoons of THC Powder blended in after sauce had thickened to my liking.

If you want a thicker sauce use 3 Tablespoons butter and 4 Tablespoons flour.
If you want a thinner sauce use use 1 Tablespoon butter, 1 Tablespoon flour.

Directions:

Melt butter in saucepan over low heat. Blend in the flour, salt and white pepper with a whisk. Cook and stir it around to incorporate for about 30 seconds. Add the milk all at once and cook quickly, stirring constantly, making sure you keep it moving until mixture thickens and bubbles. This may take some time, so be patient. Don't turn the heat too high or you will curdle the bottom and your butter may separate. (broken sauce) Once it has thickened, add your beef, ham, or other meat, and your infusion choice.
Serve hot over anything you like. My favorite is toasted and buttered English Muffins.
Leftovers can be reheated by adding a little milk to thin it out.

No problem. Here is the method I've been using. I learned this from @InTheShed. First make sure you have decarbed your weed. I copy pasted this method in my offsite notes and don't remember who to credit:

" There are a few benefits to the mason jar method over decarboxylating on a baking sheet in the oven.

For starters, decarbing in a mason jar significantly minimizes strong cannabis odours. Another benefit concerns the terpenes that evaporate in the process; they will stick to the glass of the jar and if you use the same jar for your infusion, you can preserve them. Finally, there is no direct contact with the air in the oven, and it is less likely that you will burn any of your cannabis during the heating process.

  • Baking tray
  • Kitchen towel
  • Cannabis
  • Oven gloves
Directions

  1. Set your oven between 220 and 240 degrees Fahrenheit and place the oven rack in the middle position.
  2. Break up the cannabis until it’s about the size of a grain of rice, put it into the mason jar and lightly screw on the lid.
  3. Lightly wet the kitchen towel and lay it over the baking sheet then put the mason jar on the towel. The damp towel will help anchor the jar to the baking sheet and keep it from falling over.
  4. Place the baking tray in the oven and bake for 60 minutes. Every 15 minutes, carefully remove the mason jar from the oven with the oven gloves and give it a shake to disperse the cannabis evenly.
  5. After 60 minutes, remove the jar from the oven, and let cool for 30 minutes before storing or using it for cooking.
OIL
1) cover weed with coconut oil/ olive oil or grapeseed oil 2) shake and place in oven for 8 hours at 178 (80C)degrees F, shaking periodically 3) remove from oven and cool 4) repeat two more times 5) filter and squeeze 6) store in fridge.

I use a canning jar as well but do mine in an Instant Pot. For smaller quantities I lay the jar on its side so more of the bud is spread out. If your jar is mostly full though that won't matter much.

Because of the pressure, the Instant Pot can complete both the decarb and infusion in one 110 minute session rather than doing the separately.

Using the mason jar for decarbing works great, per Azimuth and Carmen. I've posted elsewhere about my technique, which uses an inexpensive Moka Pot. It's dead easy and has been pretty much bulletproof for me. What I really like is that the infusion takes less than five minutes. Probably the longer infusions do extract a higher percentage of THC, but I'm turning 10 g of sugar leaf into about 40 strong doses. So that's efficient enough for me. Cleanup is nothing, rinse with boiling water. Done.
