OK I used 1 tablespoon of cannabutter for the two halfs and covered with peanut butter. The peanut butter did an excellent job of masking the flavor...tasted fine

I'll let you know in an hour if it worked :)

Sorry for the super getto recipie but it may be useful for someone in a bind....like me :)

Here ya go folks, Parmesan Canna Chicken Meatballs with Lemon Canna Cream Sauce!

Parmesan_Chicken_Meatballs.jpg

Lemon_Canna_Cream_Sauce.jpg

Parmesan Canna Chicken Meatballs
1 lb. ground chicken breast (I precook mine and grind it up coarsely)
1/2 C. bread crumbs
1 large egg
1/2 C. grated parmesan cheese
2 tsp. fresh or dried basil (chopped if fresh)
1 small medium onion minced
3 cloves garlic minced
2-3 Tbs. olive oil
2 Tbs. butter
1/4 tsp. salt
1/8 cup decarbed weed (or strength to your dosages)
ground black pepper to taste

Mix everything except the olive oil and butter in a medium size bowl. Make sure it is well combined
Heat 2 Tbs. olive oil and 1 Tbs. butter on medium/high heat. Then drop the chicken mixture by rounded spoonfuls into the pan. You can try to roll them in your hand if you like, but I find it easier with the spoon and I don't feel they need to be perfectly round.
I take a pair of tongs and set each meatball on it's side to brown the sides too. Sometimes you have to lean them against each other to keep them standing.
When completely browned transfer to a paper towel to drain for a few seconds, then serve hot.
Grate a little fresh parmesan on top, sprinkle a little fresh chopped basil, and maybe a squirt of lemon juice if you like.
You could bake these in the oven too, if you don't want them fried. 350 degrees on a wire rack. Bake until golden browned. If your chicken is already cooked, you are not trying to bake a long time, just long enough for browning.

Lemon Cream Canna Sauce
3 Tbs. Fresh Lemon Juice
2 Tbs. Lemon zest
1/4 C. low sodium Chicken broth
1 C. heavy cream
2-3 tbls. carboxylated cannabis (strength to your dosages)
1 or two leaves from a mature plant. Chop them up and use for garnish on top of sauce.
pinch of salt
Optional: Pepper (I prefer the cream sauce to not have the little black pepper dots in it. You could try some lemon pepper
In a saucepan mix together the chicken broth, cream, lemon juice and salt. Heat to just under boiling over med. heat. Don't scald it.
Turn the heat down to medium low or low, depending on your stove, and add the decarbed weed.
You can use it for many different recipes once the basic lemon sauce is done. Add things to it like fresh herbs, top it with some lemon zest when serving, or add veggies like zucchini to it while it's cooking and cook till veggies are tender.
Use this sauce as a topping for the Chicken Meatballs, Pasta...or whatever you like.

Wow Canna!!!!....that looks absolutely delicious...Nice recipe...I like the not perfectly round meatball too. They must be so much easier to cut with a fork...I usually look like I'm playing bumper pool on my plate when I eat meatballs :)

You are a culinary artist :Namaste:

Did you write down my English muffin recipe?

One nice thing about these meatballs is they are easy to eat. Pick it up and pop it in your mouth....unless you have to use table manners.

Easy to cut with a fork. ;-)
I put mine over linguine with the lemon sauce, and my original recipe I add thin sliced zuchinni into the sauce and let it cook till tender. Soooooo good.

English muffins are a favorite go to snack also. Matter of fact, I'm going to look in my freezer and see if I have any to try this morning.
Thanks!

:yahoo: Thanks Jay! I went digging in the big freezer and found a package of wild morel mushrooms picked last year that I had hidden! Sooo....mushrooms aren't supposed to be bad for me and Olive oil is supposed to be good for me....I'm having fried mushrooms in Canna oil for lunch.
YUMMMO! We'll see how the tum likes it. LOL

Good morning/ evening everyone :ciao:

I need to make some edibles this morning...but I don't feel like going to the store for ingredients :)...so what I have come up with is English muffins toasted, then spread some cannabutter on the muffins, then top with a little peanut butter for flavor. It might be gross but I'm gonna try it. Then for lunch I was thinking of making some pasta, melting some cannabutter on the pasta and adding some tomato sauce, pepper and parmesan cheese.

If anyone has any thoughts or ideas please share :)

The other ingredients I have to work with are venison steaks, buffalo burgers, cod filets, chicken breast, lots of vegetables, soups, eggs, potato chips and cheese (of course :))....it's not much to work with for making edibles that's why I'm going to try the English muffins and pasta (not together :))

I'll you know how it works out :)

Hi Jay :byebye:

For your muffins try canna butter, p'nut butter and a

good dollop of honey slide (recipe is in Cannas' blog)

For your pasta, try pasta, drained, and stir in your canna butter,

add a bunch of crumbled bacon and Parmesan.

Cut the bacon in 1" squares and fry to crispy, drain on a paper towel

then crumble it once it has cooled :ciao

My favorite sandwich is smoked tongue on wry

Hi Bluefly :ciao:

Great advice...Thank you for that :)

I remember reading about the honey slide...I'll go back and look for that

...also bacon and parmesan...yummy :)

Smoked tongue on rye huh?...is that pigs tongue?....when I was a kid my friends mother was from Thailand, she would make us pigs tongue and feet all the time...and spring rolls :)....although some of the ingredients she used I thought was a little odd when I was a kid, I remember I loved her cooking

One of my favorite sandwiches is called a lardo sandwich...it's made with the fatty (white) part of the bacon :) ...I had my first one when I was in northern Italy and I was hooked LOL

have a great Sunday :high-five:
