I see this printed on some bottles of Kombucha at the store: “Fermentation is an art so slight, that variations should be celebrated.” And I always think of cobs when I see it how can I not!
I think you’re onto something there... time, temperature, moisture of the produce, all these will create variations. And I’m sure there’s more ways to vary it as well... very cool.
