Yeahhhh. This is a " Double bubble" method that I learned here on the greatest of sites 420 magazine.. Me being one that understands alot, Ive only done this method and I find this the best way... The recipe calls for an oz per lb of butter... OOPPPSS!!!! missed by a few grams... Shit happens when ya party naked my friends... So.... Butter in the small pot, a lil water in the bigger skillet... Just below a rolliong boil, add water to outside pot as needed. Ill cook for about 2 hours... I find there is no need for the butter to simmer... Butter simmers at almost 300 degrees F... Ya only losin good shit over 175.. The double bubble process allows you to maintain an inner pot temp of just under 180. No boil, no loss. Unless you are using a pressure cooker or dutch oven, if its bubblin, ya doin it wrong... Small fizz is ok... NO BOIL.
