Ok. The butter chicken is getting made tomorrow. Sorry! I am happily off tomorrow for Veterans Day. Hubby got stuck helping a friend repair a bike today, and I got stuck at the house with no car and not all of the marinade ingredients that I need. I won't compromise on the dish by marinating less than 8 hours!

I picked up a 4 pound chicken for this. I'll cut it up and marinate it in the morning. You can buy a pack of thighs as well. I like cooking a whole chicken. I like dark meat and hubby likes white meat. Have your butcher cut up your chicken if you don't have a good knife.

Now...I've never made nor eaten Butter chicken. I chose a NY Times recipe, due to the number of favorable reviews. I never deviate from a recipe the first time I make it. I'll make sure to try it next week from an Indian restaurant so I have some sort of comparison.

I have some SinCity Harlesin EVO oil to add to the dish. It has an earthy mango flavor that will go nice with the butter sauce. I have a jar of mango chutney as well. The flavor profile of Indian food is just perfect for dosing!

Now...there are plenty of options to buy an already prepared jar simmer sauce. I'm sure they are not half bad. I just can't buy prepared foods.
 
I just wanted to acknowledge the special and worthy day today. Veteran's day is to be honoured and treasured as just a SMALL symbol of the sacrifice Veterans and our families have endured.

My grandfather joined the St Victoria Regiment in Manitoba. He was 18 and wanted to fight for Canada. However, back then, Native Canadians weren't considered Canadian citizens, they were considered outcasts and sometimes not even human. So my grandfather relinquished his Native rights and was sworn in as a Canadian in order to fight for his country.

He went right to the frontline and was injured, he was flown back to Canada and was permanently disabled and could only work doing laundry. He soon passed away at the age of 21, preventing me from even meeting him and thanking him myself. As a mission, I got a hold of all his veteran records and that made me feel closer to him. So I keep them with my family tree research so he is honoured every day with me.

So every year I write about him and share some of our family knowledge because it's amazing how many stories of service go unrecognized and families are there to carry the weight for generations to come. This is just a short version of what my family has done for Canada because we are fighters to the end.

May all the veterans feel honoured and may their stories be heard by us who benefited from their selfless sacrifice.

*Butter chicken is freakin' hard to make, of course I had to go and pick one of the hardest things to replicate in a home kitchen. Just had to post this disclaimer because I'm just a taster of foods, but extremely picky, if I like something new it's a celebration. Thanks sis, I appreciate your enthusiasm and going to that full expense. My brain thanks you!

I only have about 75 herbs and spices in the kitchen...lol. It's almost as bad as my seed hoarding!

Easy peasy @LadyG2HM! ;) It seems like a lot of involvement needed, but it's not overly hard As I said, you can buy the prepared simmer sauce. Just add your chicken and make some rice!

If it's overwhelming, break it down into steps. Prepare and measure everything out first, so you have all of your ingredients ready to dump in. If all my dry spices go in together, I have a little bowl or cup with them all measured out. I have my peppers, garlic, onions..all chopped. It's much easier and more fun when you have everything you need at your finger tips. Much of my day working as a chef was food prep. Dinner service was just a few hours of the work day. We had everything we needed at our stations. Organization makes it seem effortless! :surf:
 
Well said LadyG2HM. My father was and brother is a war veteran. I visit the veterans cemetery many times throughout the year, but my favorite days are Memorial Day and Veterans Day. I love to see the flags wave in the breeze. War takes it's toll on families for sure. Your grandfather sounds like an amazing man. :love:

Very special words, Lady G2, I did 5 years for our country, and am watching it go to hell in a hand basket. But, I still have a place to live, and food to eat, so I'm okay.
The laws on the books are so stupid. Your grandfather had to give up his heritage to join up. I wasn't that eager, but I did enlist instead of being drafted. First smoked cannabis in the Army, lol.

Lady G, you have a very organized approach to cooking. Like they do on the food channel, little dishes with everything ready to just read the directions. Very smart. Love chicken and rice, can't wait for the recipe.

*So sorry I missed this, my mind is a little bit segmented lately. I'm sure it will balance out when I see that my seeds are growing. So they are coming along, I have been wanting to try the Afghan Kush for a long time.

*Yes doing a Brix run, not sure what that actually means except that there is a schedule and you use their stuff to feed at certain times. That is the extent of my knowledge.

*I am doing great, I am almost suture free, only 3 left and I keep tugging at them to see if they will come out. So gross, but cool that there is string sticking out of me.

*I am in touch with an R/N out of Australia who owns a service called "Uplifting Dementia" and she is amazing. I am learning so much from her and she's a beautiful spirit. I am reading her papers right now and writing responses. I am still waiting to have a talk with Dr. Michelle Ross, and have paused on writing my book because it's still difficult to write on the laptop right now.

*There is so much happening that I'm like an octopus with double the tentacles, I like being busy as long as I have meds, I'm going to be okay.
