New Moon Over Guawi: A High Brix Journey

Taste like freakin heaven man.... really though, its hard to describe. I can tell you it wont go bad, and can replace salsa if you like it. It is fermented veggies, usually white cabbage and spices. Buy a jar sometime, you wont be disappointed.... well probably not. It isn't for everyone, but I am glad I found out about it cause I was buying local salsa and it didn't stay good long! Just make sure there is no added vinegar!! Nothing wrong with vinegar, but thats not the right way to make that kinda stuff... like pickles, sauerkraut, etc... you only need salt and water to make that stuff!
 
Opened the Cob to Dry and Re-Vacuum Seal to start week 2 Cure

Removed and weight was 18 grams, Needed to watch closer so used my Grain scale to see the loss of weight
more clearly.

Room temp was 73F @ 53RH. Air Drying I could see - 0.6 grains every 5 minutes OR 0.25 grams every 30 minutes
I let it Dry for 1hr at room temp and had a loss of - 0.5 Gram. If it continues at end of week 4 there should be 16 grams
(started with 28 grams)

It smells like Spicy TERIYAKI BEEF JERKY

Oh anyone else same the plastic bags used in curing process ? I have saved the last two in
separate zip lock baggies and can go back and re-smell the process changes
 
Yes sir, I just use the same bag over and over. I also try and position the cob in the same area so more sticky goodness isn’t left on fresh plastic. Probably makes no difference at all, but I like to think so!
Yep, that’s what my cobs smell like too... pretty amazing the changes they go through!

Interesting I wonder if I should pour the collected "REDRUM" (COB Juice) back on or into the new baggie
before the reseal.

I kinda like keeping the old used Vacumn bags so I can re-check the different smells through the process
 
Oh Man I just remembered I wanted to take a look at the COB JUICE under my
Binocular Microscope and get some pictures, its connected to my computer
through the Camera mounted on top so would of been able to capture the
images to share . Oh well next time :slide:
 
Now I am jelly that is the setup I wanted....Grrrrrr

Its really a neat set-up I opted for Monitore View / Camera option since I have an issue with
my Eyes Focusing on the same spot and looking into the Microscope or Binoculars I cant focus.
Plus is so much easier to Use :slide:

Thats a pretty cool idea, keeping the old bags for reference.
I'm not too sure about pouring the juice back in... I can't really advise on that.
Whats the tea look like under your scope? I bet its pretty cool!
 
I have not looked at the tea's yet, so do share. I have looked at the soil in my worm bin though. I see where shit for monster movies comes from, there is all kinds of stuff moving around on that soil. I tried to get a pic with my phone, no success.

Was that a book reference?

:rofl: it was my sad attempt at a Wizard of OZ reference using the critters found in living soil
