Yes it is a stress. You can try fimming them as well as opposed to topping. Not quite so stressful.

If your plants are healthy then they will power right through either a topping or fimming. No problem.

It really depends upon the size of your growing area, what you are looking to get from the grow, what your timeline is.

Do you have any height or time restrictions?

Have 2m high room and no time restrictions so can let them go to when ever

My white widow last grow got flipped when they were at 17" tall. I had fimmed all 4. After the stretch the tallest got to 44", the shortest was at 40".

Just want to be sure you have room for the lights above the plants after they finish the stretch.

Ya I think your idea of topping them and giving them a week to recover before flip is solid. Better safe than sorry.
