we did a cubano Wellington at the restaurant. 2 pork tenderloins meat-glued together and brined, then marinated in mojo marinade. Sear and wrap that in layers of Swiss, ham, and pickles then puff pastry.... it was Amazing

That’s not really something to look up, one of the sous chefs decided to put it together.. I don’t know if you could do a Wellington in a smoker.. maybe smoke the tenderloin first
