Here's an update if anyone is looking.
I gave 3 tsp of epsom salts which equaled 1/4 tsp per gallon.
The plants have started to grow again, even under water only.
Based on my observation the pistols began to look less amber.
As if they are no longer nutrient blocked.
I still have lower buds with white pistols.
Based on these observations this is the plan:
I'll be taking a branch or two of the "mostly done"
so it can be mostly dried for my trip out of town next weekend.
Then put them back on flower nutes for a week or 2 having fixed the mag def.
Rinse again for a week and then take a full harvest.
Thoughts?

Sounds like a good plan. At this point, you're probably gonna have to work out the harvest the best you can. Clipping the mature stuff will allow you to get some light lower down the plants. It's a good indication that you notice the plants are putting some weight on, and growth has re-started. I'm not 100% positive, but after you clip, it might take a little bit for the plant to start flowering again (finishing), as it takes energy to try and repair the cuts you've made.
Again, it sounds like your plan is good, and at least you'll have some goodies for your trip.
