I did some defoliation removing some of the top fan leave to allow the light to get to the lower shoots

Removing top fan leaves and allowing light on the lower shoots only hurts the lower shoots as they will not stretch to reach the canopy. Rather, you should leave them in the shade underneath and this will promote stretching to the light and to the top of the canopy. Topping its the best way to let them catch up.

Healthy looking plants, Whats the total draw wattage of the lights you are using?

Well here we are starting week 7 of flower and I've all but managed to fry my girls not sure why but it could be nutrient lock out or feedin Mega Crop at too high an EC so I flushed 'em and they seem to be reaching for the lights as if to say I'm not diein today so here are the latest pics

I think your grow looks just fabulous! :)
Thanks you
Why do the leaves do that? Is it just from the lights?
No it's from my screw up I grow in Coco Coir it's a form of hydro growing and it requires you water the plants to a runoff of about 20% to 30% to keep nutrient build up from occurring. The three plants that were affected are on the same drip line. I had been feeding 5 gallons a day between the three plants and they got big and started drinking more I should have upped their watering at the first sign of reduced runoff. Well being the slacker that I am I didn't follow through on upping my watering to get the 20% runoff and caused the plants to go into nutrient lock out the plants that were watered sufficiently were not affected chalk it up to lesson learned.
