The first hour or so at high temp will decarb and remove water content. After that you want it on low, like simmer for a long time. When on high, check on it every 15 minutes or so to see if it's dried out, you can always add a little water so it doesn't burn, the water will boil off. One thing I will say is the damn instant pot confuses me, hopefully you got one where you can set the temp low, med and high. Mine doesn't have that so I have to look at the booklet to determine which setting to use.
