I believe you learn what to look for by following the kit instructions a few times. They recommend following them as you learn your plants and the high brix system.
Hey curso I think I understand a little better now. Doc gives an excellent description of his products and exactly what they do. He just posted just posted it in reply to a thread.

This is 100% right. Its acquired knowledge not really something we can show or teach. It's the art of what we do. It's like learning how to make a nice gravy then taking that knowledge and turning it into a nice sauce.

Actually one of my interview questions when hiring cooks is something like..."how long do you boil chicken stock"...the job generally depends on their answer 
"When it stops clucking, its done"

I had one of my nephew's want to learn how to cook, so I gave him a job...I had him deep frying chicken fingers or something dumb like that for a party. The last pan he did was like raw...My joke with him is, the chicken crossed the road because it was still alive when he served it.

This is what I am making...Its a "smore's bar"
I am using a sugar cookie base then a really good milk chocolate then a layer of marshmallows and topped with peanut butter cookie.
We'll see how I do..I might skip the drizzle..
