On when to chop.... depends on the strain... I like to let my girls go a little longer get all clouds and some amber... some plants never show amber, some plants go right from clear to amber/pink/purple.
I look at it like this:
What's coming up in VEG?? Do I have time to keep running a plant late late into flower?
IF I do I usually let them go, watch the fan leaves, let the plant eat up all the fans ... they will start to drop off.
Don't worry this is completely normal and what some folks that run nutes start to get crazy and think there's problems. With organic soil this is completely normal.
Then when most of the old original fans have fallen or have turned yellow/purple/ black what have you then I wait another week or so... patience is key.
I sometimes can chop, hang dry and into jars. Very shortly after jarred (week or less) ready to smoke (or vape in my case). Kinda like grapes, let the flowers ripen on the vine... This is just how I do it... I get some mighty fine buddage this way but some will argue take it 50% clear trichomes...
It comes down to how you like your meds. Try some early harvest ... then try ripe on the vine, late harvest. Soon 'nuf you will find what you prefer. This is the coolest part of organics, it gets to that level of taste, meds and effect; grow to your own personal taste.
I like to keep a few jars around that are all different and use what my mood strikes me in the moment and friends!
