You should give it a crack. 1 plant.. Easier than you think. At first; similar to hydro cos your thinking amounts. Spoons of this, cups of that... But there's a lot of room for error. A LOT more than hydro..
I am NO expert but there are plenty on 420mag to learn from; pick out 5-10 easiest-to-get ingredients or make your own. Bit of a time investment for say compost but grass-clippings and brown leaves are easy enough to get.. Worm farms are simple and you just throw your kitchen scraps in there..
More complicated at first to get running (as opposed to goin down the hydro shop and buying stuff) but easier later. And mostly free later as well. I pay for good coco:

And I basically just add water..... Mostly..!
