Lecithin is a way to get the oils to bind better. It's a sort of promoter, and also helps the oils to mix better, aka an emulsifier. If you look at some salad dressings, they contain the lecithin to help mix the hydrophobic and hydrophilic components of the dressing (oil and vinegar/water).
