Got confused at the start so I just kept this here going, although I still post pics to my journal.

Should I continue to prune the older fan leaves

I would only prune the ones blocking light from bud sites or ones touching soil. And perhaps a few lower ones to get clearance to water the pots. Your plants are looking good.

At this stage are the ties holding down the plant limbs doing anything? The branches look pretty thick to be effected by those little ties.
