I don't consider myself an expert. Some things about the process could be considered "truths", and other things might be more of preference.
For me the real trick is in the curing. And I prefer it to happen slowly even if my anticipation is driving me crazy.
I also chuckle a bit when weight is discussed. From the time it's dry enough to smoke until it's fully cured, I have no idea how much I've already smoked, because it's already been shrinking to an extent without me touching it.
If I'm not tracking cost, revenue, and profit, the true weight is kinda meaningless.
How good is it? How does it taste? How long will it last me? Are my main questions.
