I believe you (can't tell from those pics), but I'd wait for at least some amber on the calyxes before considering chopping.

I know it's easier to see sugar leaves (which is what's in your pics) than calyxes, but the only amber that matters is on the calyxes.

Based on the few amber on your sugars I'd say you have a ways to go
