Ok if you wash the peels first and cut them in slices, place them in a clean jar.
Don't over pack it.
Fill with water, stop above the peels, and just shake/turn every day.
If it is cloudy/whiteish, you're fine.
Black is bad.
Otherwise just boil the peels for 10 minutes..

I tried the Banana peels in water in a jar, I always got it a bit sour smelling, it was off. Could be my water, I should try distilled
