Its quite common for people to harvest a plant in stages.
I think you would be fine taking some testers. I wouldn't take any of the major buds as the will keep bulking up for you. Great looking girls my friend.

Those old seeds might be gold! I have some 40 + year old ones I'm unable to get any started yet and I would love to. I have a good guy here working on them from time to time. I don't have the skill to get them started. Next grow will be epic!
