drying

I'm interested in freeze drying. Do you just put the fresh plant minus the soil straight into the freezer and leave it for a week or two?

I've never had an issue with drying my herbs... but I've never done it where the relative humidity is between 30 and 40% on a daily basis. With the humidity this low, if I use the method I would normally use at the beach (hang 3 days, then cure in jars/ziplocks), it will be dry and brittle...

This is my first grow. I only have 3 plants outside but not sure when to Harvest. 1 plant looks almost ready the other 2 are not as ready. I live in Central California where it is very hot. Also if I just have a few plants do I really need to cure it after drying?
