Trippy Vegan Chickpea And Thai Green Curry Patties
Today’s recipe for Vegan Chickpea And Thai Green Curry Patties is a winner. The flavor will satisfy hardened meat eaters and burger fans alike. These patties are fairly filling and the best part is that you can make them as thick or as thin as you like. This recipe makes 4 to 5 patties so, double it if you need to feed more. You can freeze any uncooked patties for another day.

Yield: 4 – 5 patties

Ingredients:
15 oz. canned chickpeas, drained
½ cup grated carrots
¼ cup diced and fried onions
¼ cup roughly chopped rolled oats
1 tsp. Thai green curry paste
1 Tbsp. lemon juice
2½ tsp. infused olive oil
1 tsp. finely grated fresh ginger
½ cup chopped coriander
1 garlic clove, minced
½ tsp. salt
¼ cup chopped fresh basil
Maize meal or flour for dusting

Method:
Using a fork or potato masher, mash the chickpeas in a bowl until the chickpeas have a mashed but coarse texture.
Add in all the remaining ingredients and use a wooden spoon to mix everything evenly.
If the mixture seems very wet and will not hold together when squeezing a handful, add in a little more oats and mix.
Repeat this step, if necessary, until the mixture binds when squeezed. This helps your patty to not fall apart when cooking it.
Once you are happy that the mixture will hold, wrap the bowl, and place it into the chiller for 30 minutes to chill and for the flavors to infuse into the mixture.
Dust a work surface with flour or maize meal.
Using a cookie cutter as a ring, press the mixture into the cookie cutter and press it down until firm. You can make the patties as thin or as thick as you like. Try to choose a cutter that is a similar size to the bread roll you will be using.
Dust the top and sides with the flour or maize meal. No need to coat it, just use enough for the patties to not stick.
Continue until all the patties are made and place them back into the chiller for another 10 minutes.
Prepare your bread roll and garnishes. Fresh sliced tomato crispy lettuce and cucumber are great garnishes for this burger. Don’t forget to dress the garnish with some salad dressing or butter the bread with mayonnaise.
Place a non-stick pan over medium heat and add a little oil.
Once the oil is hot, fry the patties for a minute or two before flipping them over.
Give them another 2 minutes and place them onto the burger buns.
Go to town and enjoy these bad boys.
