Weird seedling

So 2 out of 3 planted seeds are growing more leaves for me. I am only on seedling day 5 though. This one is a Blueberry and is growing some weird puple looking thing? Any idea what this may be or possibly just needs more time?

Hard to tell to exactly what that is. Could be the start of the second internode starting. Hard to tell in that small picture though. Give it another couple days and keep a close eye on it. So far it’s looking good. Keep an eye on it.
