I'm new to growing indoor and everytime I dry the buds smell like hay I'm wondering if I'm harvesting at the right time or if it's drying to quick it's weird and is becoming very discouraging

Hard to say, lots of things can contribute to green tasting bud, temp during grow, nutes given in flower, dry/cure methods.
How do you dry it? And do you cure it? Along with pics of when you harvested, otherwise no way to tell if too early or too late.

Read up on how to cure your weed. Jar, hygrometer, 60-65% RH. That should help.
