Butter is so universal in cooking. I can't help but to think of all of the ways of cooking with Cannabis.

I can hardly wait to try it out in bacon grease. I'm wanting to make crawfish etouffe...

I heard that you can use bacon grease to extract and I am going to try it, :peace::yummy:first chance I get anyway.
 
I had a dream the other week and in it i had opened a restaurant and everything had thc in it. I particularly like the my unconcious idea for fried buffalo wings (thc was in the sauce). A 10 piece bucket was $25 tho. haha
 
I have a similar dream. Maybe more fantasy actually. but the good thing is that dreams come true... It's when your heart takes the steps in that direction!! I just wanted to be the first...:passitleft:

Yep,
Icing is made with, you guessed it... "BUTTER"!!!
it has lots of powdered sugar and...
Vanilla!!!!!
And you can even make it pretty!!
 
Yeah... I was was just chattin with WaVancouver about making homemade whipped cream icing... I was thinking you could take Heavy Whipping cream and simmer it with cannabis added for a bit, and then let it cool. Then you could follow this recipe.

INGREDIENTS (Nutrition)

* 1/4 cup cold water
* 1 teaspoon unflavored gelatin
* 1 cup heavy whipping cream
* 1 tablespoon white sugar
* 1/2 teaspoon vanilla extract

DIRECTIONS

1. Chill mixing bowl and beaters for at least 15 minutes before using. Place water in a small microwave-safe bowl. Sprinkle gelatin over water and allow to soften 5 minutes.
2. Dissolve gelatin by microwaving for 3 minutes, stirring after every minute. Remove from microwave and let stand at room temperature for 10 minutes; gelatin must be liquid but not warm when added to cream.
3. Remove bowl and beaters from refrigerator and pour in cream, sugar, and vanilla extract. Beat together just until beater marks begin to show distinctly.
4. Add gelatin mixture to cream, pouring in a steady stream while beating constantly. Beat until stiff peaks form. Use immediately.



I was thinking though the flavor of cannabis may be a little too strong. What do you think?
 
The recipe for Super Elegant New York Buttercream Icing that i used back in culinary school is:
2 lbs vegetable shortening
1 pound butter(budder)
1/2 Tbsp salt
12 oz dry milk
5 lbs powdered sugar
1 pint water 110*F
1 Tbsp vanilla

Cream it all together untill it gets good(like 6 mins).
If you can't tell, we made a lot at once. It was desert week.

Hey MsFox,
I was thinking off and on last week about using Milk or heavy cream as an extract source, so I was surprised and delighted I wasn't the only one...
however, I do not have enough experience to make that judgment call.
As I said earlier, I think it is going to make a difference what kind of herb, as well as the part of the herb etc... that will determine palatableness. I could be and have been wrong lots.....

My second cannabis cooking experiment I did a few weeks ago, was the first I have done in years. So I'm extremely excited about new experiences.

Mine had a very strong taste and I, me the way I am, I didn't let the initial high start coming down before I was eating more. (every 4-5 hrs) Maybe I just like chocolate, maybe I just like rich deserts... (hmmmm among other things:biglaugh:) but I do know this... I LOVE turtle brownies!!!!! And Cannabis turtle :kiss:brownies must be da bomb man!!!!!

Oh yeah, Now your talking!!! Thanks Charlie!! I can hardly wait to try this one!! But let me get this straight...instead of regular butter... you use 1lb of budder??? or cannabutter??? I have a feeling it's gonna make a difference and I wanna make it right!! I'm having a costume party pretty soon (Pirate) and I want to make some cupcakes!! I will be using this recipe!!!



 
SmoknBabe - I think you're right about what kind of cannabis you use in a "cream based" recipe. Cream is different than a brownie recipe which you can cover up most of the unpleasant taste. You will be able to taste everything in a cream based anything. That leads me to ask about maybe the best tasting cannabis. There's gotta be someone out there who knows. I don't believe you will be able to use just any strain of cannabis. What about a fruity tasting cannabis? Maybe that would work good.

the alcohol soak is a tincture, but you could really do alot with cannabis, its just another herb on the spice rack. I would make some hash if i were you newfun...
