Langostino (Or Shrimp) Scampi
Ingredients
6 tablespoons Magical Butter's Butter
3 tablespoons Magical Butter's olive oil
4-6 large cloves minced garlic
1 pound langostino or jumbo shrimp
2 lemons, juiced and zested
½ cup chopped italian parsley
¼ cup white wine
½ teaspoon kosher salt
½ teaspoon fresh ground black pepper
¼ teaspoon red pepper flakes
Garnish
¼ cup parmesan Reggiano cheese
¼ cup pecorino Romano cheese
How To
1. Melt the 4 tablespoons of butter and the olive oil together in a heavy bottom large sauté pan on med-high heat until butter turns golden in color, and bubbles.
2. Then add the shrimp, salt and pepper.
3. Cook for 1 minute, flip and add garlic, then cook for an additional 2-3 minutes.
4. Deglaze pan with white wine and cook for 1 minute.
5. Add lemon zest, chopped parsley, remainder of the butter, red pepper flakes, stir until butter completely melts then remove from heat.
6. Stir and serve.
7. Top with cheese if desired.
