Tao Sesame Crusted Ahi Tuna With Wasabi Soy Citrus Sauce

Ingredients
- Tuna:
- ¼ cup Magical Butter's toasted sesame oil
- ¼ cup Magical Butter's sunflower seed oil
- 12-16 ounces sushi grade ahi tuna, 1 solid piece 4-6" in diameter
- 4-6 tablespoons black and white sesame seeds
- 8 ounces lager-style beer, (like Stella Artois, or Sapporo)
- Sauce:
- ½ cup soy sauce
- 4-8 tablespoons crystallized ginger (about 5-10 pieces)
- 3 tablespoons orange blossom honey
- 2-3 tablespoons prepared wasabi
- 2 tablespoons fresh orange juice
- 1 tablespoon fresh lime juice
- 1 kaffir lime leaf (you can substitute 1 teaspoon fresh lime zest)
- Garnish:
- Baby cilantro sprigs (or chopped cilantro is fine)
- Pickled thai red chili slivers (red jalapeno is fine)
- Lime wedges
- Tuna:
- Take the sesame seed oil and coat the tuna.
- Then coat with black-and-white sesame seeds, cover on a plate and set inside the fridge for 15 minutes.
- Place 1/2 of the sunflower seed oil in a large heavy-bottomed sauté pan and coat the pan on medium-high heat until it's scorching hot.
- Take tuna out of the refrigerator and sear on each side in the sauté pan.
- Once all sides are seared for 45-60 seconds per side remove from the pan.
- Put the tuna on a plate, cover and let rest in the refrigerator until you are ready to cut and serve.
- Add beer to deglaze the pan and cook until reduced by half.
- Sauce:
- Place all of the ingredients inside your MB2 machine.
- Select the "Temperature" and set at 160°F then press the "1 Hour/Oil" button.
- Pour into serving dish until ready to use.
