Mr. Butter's Pumpkin Spice Cookies are the perfect recipe for this holiday season. In this example we're going to use good ole' Betty Crocker's Pumpkin Spice Cookie Mix. These cookies are so unbelievable!

*Soy Lecithin is an emulsifier. It is not necessary for the recipe. If you do not want to use Soy Lecithin or do not have any simply omit this ingredient from the recipe.

- 1 Egg
- 1 (17.5 ounce) Bag/Box Pumpkin Spice Cookie Mix (Grab mix with at least 1/2 cup of butter required.)
- 2 Tablespoons Soy Lecithin Granules*
- Whatever the recipe calls for in butter or oil we like to use MagicalButter's Magical Oil for most recipes requiring oil or butter.
- Mixing Bowl
- Whisk/Mixing Spoon
- Cupcake Tray (easiest way to make consistent size)
Step-by-Step Directions
- Crack the egg put it in the mixing bowl
- Add MagicalButter's Magical Oil or Magical Butter
- Open Cookie mix add to mixing bowl
- Add 2 tablespoons of Soy Lecithin*
- Use Whisk/Mixing spoon mix thoroughly
- Fill cupcake cavities half full
- Place tray in oven at 240 degrees Fahrenheit
- Cool for 5 minutes enjoy your Pumpkin Spice Cookies
