Chicken And Broccoli Cheesy Pasta
Ingredients
1/2 cup Magical Butter's butter
1 1/2 - 2 pounds cooked and diced chicken
1 - 1 1/2 pounds cooked and chopped broccoli
1 pound Penne Pasta
1/2 cup heavy cream
1/2 cup milk
1 medium onion
2 minced shallots
3 - 6 cloves minced garlic
4 - 6 ounces white wine (or lager beer)
1/2 cup chicken broth
8 ounces shredded extra sharp cheddar cheese
8 ounces shredded gruyere cheese
8 ounces pepper jack cheese
4 ounces cream cheese
How To: Topping
1. Melt the butter in a large saute pan on medium - high heat.
2. Add bread crumbs and stir for 1 minute. Then add parmesan cheese, stir and remove from heat. Set aside until just before baking.
How To: Entree
1. Preheat your oven at 325 degrees F.
2. Put water into a large pot with lots of salt, bring to a boil and cook the pasta halfway, (approximately 4 minutes) Strain and set aside. Heat milk and cream in a separate pan on medium heat.
3. While the pasta is cooking, melt the butter in a large saucepan on medium heat. Then add flour and stir until smooth and golden brown (approximately 3 - 4 minutes).
4. Add heated milk, cream and chicken broth and whisk thoroughly. Add cheese, salt, pepper and nutmeg. Whisk until the cheese has incorporated into a sauce (approximately 2 - 3 minutes).
5. Add pasta and mix until all of the pasta is coated, then fold in chicken and broccoli.
6. Portion out into 2 cup casserole dishes or put into a 9 x 13 inch glass casserole baking dish. Top with butter and breadcrumbs and cheese sauce and mix.
7. Bake for 20 - 25 minutes.
