Agave Maple Butter Cinnamon Sweet Potatoes
Ingredients
½ cup Magical Butter's butter/coconut oil blend, split in half
4 sweet potatoes
⅓ cup agave syrup
1 teaspoon fresh ground cinnamon, and more for topping
½ teaspoon pink Himalayan salt
⅛ teaspoon organic ground cayenne pepper (optional)
How To
1. Heat oven to 325ºF.
2. Wash sweet potatoes thoroughly, keep the skin on and cut them in half, lengthwise, and put into a roasting pan open face up.
3. In a mixing bowl, whisk butter/coconut oil blend, agave and cinnamon together, and pour on top of potatoes, cover with aluminum foil and place in preheated oven for 35 minutes.
4. Remove from oven, and drain the leftover liquid into a saucepan on stove top on medium heat, and cook until it reduces, and thickens into a syrup. About 5 minutes.
5. Cut sweet potatoes into 1-2 inch thick wedges. Top with syrup, cinnamon, cayenne pepper and serve.
