Napa Cabbage and Jicama Slaw
Ingredients
1 cup homemade Magical Butter's mayonaise
2 cups shredded Napa cabbage
1 cup grated jicama (on large hole box grater)
1 small julienned cubanelle pepper
1 grated carrot (on large hole box grater)
1/2 small grated onion (on large hole box grater)
2 tablespoons Dijon Mustard
3 tablespoons rice wine vinegar
1 tablespoon sugar
3 sliced scallions
1 orange, juice only
1 lime, juice and zest
2 tablespoons honey
1/4 cup cilantro
Pink Himalayan salt and freshly ground pepper to taste
Topping
4 tablespoons Magical Butter's butter or oil
1 - 1 1/2 cups seasoned bread crumbs or fresh homemade (easy to do)
2 - 4 ounces parmesan cheese
Step By Step Directions
1. Whisk onion, mayonaise, Dijon Mustard, vinegar, sugar, scallions, orange juice, lime juice and zest ad honey in a large salad bowl.
2. Toss in cabbage, jicama and carrots, cubanelle pepper, cilantro, salt and pepper to taste.
3. Cover and refrigerate until ready for use.
