It's raining - Should I collect some?

I was wondering how you all feel about watering with just rainwater?? For indoor plants. Can I use it one time and then tap water for a different time?

I would pick a water source and stick with it. You want as few variables as possible if something should arise. Changing water will ultimately change you pH and require closer observation.
