Is there any way I can bring my plants back to veg if they've started flowering to early?

Welcome to 420. Increase your light period. Go back to 18/6 or at least 16/8. Takes a little while to go back.

In less the plant is an auto flowering strain & then its just going to do its thing !

As well as the light schedule give it some veg nutes to help speed it up
