Better Bud Butter

I have made butter with nugs, and finely ground. Seemed like the nugs gave a better butter. I have not used water in the process. What is the purpose of the water??? What are the main things in the cooking process that affect the butter strength?
 
The purpose of the water is to prevent you from frying your bud before they can fry your brain. :) If you cook in just butter or oil, you'll end up sauteing your bud. Not good. Adding water prevents this, enabling you to cook your bud longer, drawing out even more medicine. The main things in the cooking process that effect the strength of the butter are the potency of the strain, how much of your trim is covered in trichomes (I don't use fan leaves), how MUCH bud and trim you use and how long you cook it.
