The cheese cloth may absorb a lot of the liquid, maybe more than desired. I wait until it is about 75 degrees and strain it with a metal strainer. If it's too hot it burn through the strainer - really sucks. That way it gets most of the liquid out if you let it sit for a while and you can press it out gently with a spoon.
