Mellow Mac & Cheese

I recently picked up The Official High Times Cannabis Cookbook, after noticing recipes for cannabis-infused mayonnaise and a couple of other bases I didn't consider. The recipes appear to be pretty well put together, but in realty, any recipe calling for oil, butter, or whatever your cannabis base is can be substituted in a recipe.

I used a pairing of the Cannabis Cookbook's "Ganja Granny's Smoked Mac n' Cheese" and Alton Brown's "Baked Macaroni and Cheese." When it doubt, I turn to Brown.

I found this to be a substantial and enjoyable meal, more than enough leftovers after feeding two. In the future, I would add sliced tomatoes through the mix before baking. Additionally, I believe some cubed pieces of cooked ham would work well, and perhaps some crumbled bacon mixed in with the bread crumbs.

Mellow Mac & Cheese

Ingredients
  • 1 pound macaroni (I used what was available - elbow. Use whatever type you enjoy most, or what's in the house.
  • 1/2 C cold cannabutter, plus 3 TB melted
  • 1/2 C (1 stick) butter
  • 1 C flour
  • 2 tsp salt
  • 1 tsp cayenne
  • 4 tsp smoked paprika
  • 3 tsp onion powder
  • 1 tsp fresh ground pepper
  • 1 C grated Gruyere
  • 1 C grated extra sharp Cheddar cheese
  • 1/2 C grated Parmesan cheese
  • 1/4 C bread crumbs

Preheat oven to 350 degrees.

Bring a pot of water to a boil, add macaroni.

In a large pot over medium heat, melt the cannabutter and butter.

When melted, whisk in the flour. Continuing whisking 3-5 minutes.

While making the butter mixture, heat the milk in a small saucepan to a very light boil. Pour milk into butter mixture. Add cayenne, salt, pepper, onion powder, paprika.

Stir in macaroni, Cheddar and Gruyere cheeses. This would be a good time to taste your mixture to make sure you are pleased with the amount of spices. Transfer the macaroni and cheese into a casserole dish.

Mix the bread crumbs, Parmesan cheese and melted cannabutter in a small dish. Sprinkle over the top of the macaroni and cheese.

Bake 30-40 minutes, or until the top is a golden brown.
