Meatloaf Cupcakes With Loaded Smashed Potatoes
Ingredients Meatloaf
1/3 cup
MagicalButter olive oil
1 pound fresh ground sirloin 90% lean
1 pound fresh ground pork or turkey 90% lean
1 cup finely-diced onion
1 cup finely-diced carrots
½ cup Italian seasoned breadcrumbs
4 cloves smashed garlic
2 tablespoons Dijon Mustard
1 tablespoon ketchup
1 teaspoon Blood Fire Worcestershire Sauce
1 teaspoon pink Himalayan salt
1 teaspoon cumin
1 teaspoon chili powder
½ teaspoon fresh thyme, or dried
¼ teaspoon turmeric
¼ teaspoon freshly ground pepper
2 large eggs
Ingredients Loaded Smashed Potatoes
½ cup
MagicalButter
2 pounds russet potatoes, cut into quarters
½ cup shredded sharp cheddar cheese
¼ cup sour cream
¼ cup finely-chopped chives
¼ cup half-and-half
¾ teaspoon pink Himalayan salt
¼ teaspoon freshly ground black pepper
8 strips cooked and chopped bacon
How To Meatloaf
1. Preheat oven to 325ºF.
2. Combine all meatloaf ingredients in a large mixing bowl, and mix thoroughly
3. Fill each cupcake space full with meatloaf mixture (for a more dense cupcakecompress the mixture).
4. Cook for 25 minutes or until center of cupcake is 160ºF.
How To Smashed Potatoes
1. Put potatoes into a large pot and fill with water.
2. Boil potatoes on medium-high heat until tender or easily able to mash.
3. Strain potatoes and put them into a large mixing bowl.
4. Mash potatoes with masher and add the MagicalButter, sour cream and half-and-half.
5. Whip potatoes on medium speed until fluffy.
6. Combine cheese, chives, bacon, salt, and pepper into potatoes.
7. Fill a piping bag with the potatoes and swirl them onto the meatloaf.
8. Garnish with chives, bacon and cheese to your liking.
9. Eat and enjoy!
