Giggling Goat’s Cheese And Sweetcorn Fritters
Sweetcorn fritters go with any meal at any time. They can be served as a dessert with cinnamon sugar and ice cream, as a side to a meal, or just as they are.
Here is a recipe for sweetcorn fritters that is very easy to make, and the addition of goat’s cheese adds quite a lot of extra to this straightforward dish.
Ingredients:
1/3 cup fresh or canned corn
2 cups creamed sweetcorn
1 large egg at room temperature
1 cup self-raising flour
2.5 oz. crumbled goat’s cheese
½ cup milk
1 pinch black pepper
1 pinch salt
Oil to shallow fry
For the Giggling Dip:
1½ cups plain yogurt
2 tsp. canna-oil
¼ cucumber peeled and cut into small dice
½ bunch chopped coriander
1 tsp. black pepper from the grinder
½ tsp. salt
Method:
In a mixing bowl add all the wet ingredients including the cheese and mix gently until combined.
Then mix in the flour, salt, and pepper. Do this gently and be careful not to overmix.
Line a plate with a paper towel and place a heavy-bottomed pan on medium heat.
Add the oil and wait until it’s hot.
Spoon the batter into the oil, leaving space for them to expand.
Fry until golden brown and then flip them over.
Remove from heat once they are cooked and place them onto paper towels to drain.
For the Giggling Dip:
In a bowl, add all the dipping ingredients and mix well. Taste and adjust the seasoning if needed. Remember it’s active.
Serve these tasty treats as soon as you can so they are still crispy and warm.
