Ingredients
- 3lbs Chuck Roast
- 3 Bay leaves
- 1 Large white onion sliced
- 5 Cloves garlic
- 1.5 tsp Ground cloves
- 1.5 tsp Cumin
- ½ Cup cilantro
- ¼ Cup lime juice
- 2 tsp Apple cider vinegar
- 6 Chipotle chilies in adobo
- ½ Cup beef broth
- ½ Cup infused oil
How To
- In dutch oven over medium heat, add oil, onions, add garlic and toss in roast.
- Brown roast on both sides.
- Add cloves, cumin, apple cider vinegar, and beef broth.
- Simmer for 3/4 hours until chuck if fork tender.
- Remove roast and shred it using two forks.
