Fresh Tortellini With Pomodoro Sauce And Banging Basil Pesto
Ingredients
½ cup Magical Butter's MCT oil
1 pound handmade fresh tortellini
1 can of whole San Marzano tomatoes, about 28 ounces
⅓ cup Banging Basil Pesto, + 2 tablespoons for garnish
8 minced cloves of garlic
2 tablespoons aged balsamic vinegar
1 tablespoon dried Italian herbs
Pink Himalayan salt to taste
Fresh ground pepper to taste
How To
1. Heat the oil in a large saucepan on medium heat for 1 minute.
2. Add garlic, salt and pepper then cook for 2 minutes, stirring constantly.
3. Add balsamic vinegar and dried herbs then cook for 2 minutes, stirring occasionally.
4. Meanwhile, pour tomatoes into a large bowl and crush them into small chunks with either your hand or with a potato masher, then add to the saucepan and bring to a slow boil.
5. Add pesto and reduce heat to low and simmer for 3-5 minutes, stirring regularly.
6. Meanwhile, bring very salty water to a boil in a large pot.
7. Add the tortellini and cook for about 5 minutes, or until they float to the top.
8. Strain pasta and put on plate.
9. Top with sauce, drizzled pesto, then top with cheese and serve.
